Sunflower Seed Dressing

This morning I tried a vinegar and oil free salad dressing recipe.  It turned out pretty good, so I thought I’d share.

1 1/4 c. water

3/4 c. raw, hulled sunflower seeds

2 T. lemon juice (juice from one lemon)

1 t. onion powder

1 t. paprika

1 clove garlic

1 t. Herbamare sea salt seasoning blend

Blend everything in a high powered blender (Vitamix or Blendtec work great!) for a few minutes, until smoothy and creamy. (If it’s a little gritty, blend on high for another couple minutes.) Makes 2 cups of dressing.  Use less water to make a spread instead of dressing which would work great on sandwiches and wraps instead of mayo.  Add different seasonings for your own taste.  Next time I might try basil and oregano for a creamy italian type dressing.  Dressing thickens after sitting awhile, so next time you serve it you will probably need to add just a bit more water to get to a pourable consistency again.


Below is a link to the original recipe without my modifications. I cut everything in half except the garlic and sea salt.  To me it was a little bland, so I used the whole clove of garlic, and the full teaspoon of sea salt blend that I used in place of sea salt.  If I had used straight sea salt, a half teaspoon probably would have been enough.
